While hamburgers and hot dogs might be the food of choice during the Summer for many people, a healthier (and tastier) option is the salmon burger. Whip up some of these for a healthy dinner or make them in advance for a picnic lunch.
Ingredients:
- Cooking spray
- 1 chopped clove of garlic
- 1 seeded and chopped red bell pepper
- 1/2 chopped onion
- 2 scallions, sliced thinly
- 6 iceberg lettuce leaves
- 1 pound of salmon, skinless and cut into chunks
- 1 egg
- 1 Tbsp Thai red curry paste
- 1/4 cup cilantro
Instructions:
Preheat oven to 475 degrees F (or 246 degrees C). Spray baking sheet with cooking spray to prevent sticking.
Blend the bell pepper, garlic, onion, and Thai curry paste until smooth in a food processor. Add in salmon and puree until the mixture is smooth. Next, add in egg and cilantro in food processor and puree again until smooth.
Take 1/2 cup mixture, roll into a ball, and flatten to make a patty. Lay each patty flat on baking sheet. Before putting into oven, spray the top of each salmon patty lightly with cooking spray. Bake for 15 minutes.
Once done, serve in a lettuce leaf and sprinkle lightly with sliced scallions.
