For the diabetes dish, we focus a lot of full family meals, but today we decided to add a few kid-friendly snacks to the mix. Finding healthy and suitable snacks for kids with diabetes isn’t always easy, but this great after-school snack is a simple and fun treat that you can make with your little one. - 1/2 Whole wheat English muffin
- 1 Tbsp chopped basil
- 2 tsp diced tomatoes
- 2 Tbsp skim mozzarella cheese
- 2 Tbsp no sodium added tomato sauce
Turn oven broiler on and preheat. Spread tomato sauce on top of whole wheat English muffin. Sprinkle cheese and diced tomatoes on top. Top with fresh basil. Place on baking sheet and broil until the sauce is bubbly and cheese is melted.
